Nacho Momma’s Average Nachos

Monica is not your average Momma. And she definitely doesn’t make average nachos. In fact, I think you’d be hard-pressed to find nachos like hers anywhere else in the River Valley unless, of course, she’s catering an event outside the area.
Monica follows a gluten-free diet. When I asked her why she wanted to start a food truck, she told me a funny story about Las Vegas but turned serious when she said she wanted to give people a delicious option with a fully gluten-free menu.
For those who aren’t gluten intolerant, you wouldn’t know that her meals come sans gluten. The chips in every dish are crispy and crunchy, and they hold up to the creamy cheese dip in a herculean fashion.
The best seller on her menu is the “Cyclone,” and I can tell you it’s at the top for a reason. The seasoned taco meat is richly flavorful, and the toppings are crisp and fresh. If you want something different from the norm, then I would recommend the “Listen Linda” (fried chicken nachos!) or the “Nacho Average Cheeseburger” (a deconstructed cheeseburger and fries dish that will keep you coming back).
Monica even has you covered if you aren’t carnivorous. Though not on the menu, she offers the “Fiesta” as a vegetarian option. These nachos are covered in her signature cheese dip and loaded with fresh toppings.
